Mama B’s Foolproof Brisket
Serves 6 to 8
3 to 4 pounds first cut brisket
11/2 packages Lipton onion soup mix
1 (14-ounce) can jellied cranberry sauce
3 tablespoons ketchup
1/2 cup water
1 teaspoon garlic powder
2 garlic cloves, crushed
Preheat oven to 300 degrees. Line a roasting pan with enough heavy duty aluminum foil to wrap up entire brisket. Put meat on foil fat side down.
Combine soup mix, cranberry sauce, ketchup, water, garlic powder and garlic cloves in a small bowl and pour over brisket. Fold aluminum over the brisket, sealing tightly so the sauce does not leak out. Bake 4 hours. Do not open foil during baking. Let cool. Place still wrapped meat in the refrigerator overnight.
Skim off fat and slice meat thinly across the grain, trimming off any excess fat. Reheat and serve with pan juices.
Note: Brisket can be frozen. Defrost and warm in the microwave or the oven.
